Cabinet Cookies

Ingredients
  

  • ¾ C creamy peanut butter
  • 1 C flour
  • 1 tsp. stevia or sweetener
  • ¾ tsp. baking soda
  • ¼ tsp. sea salt
  • 2 tsp. vanilla
  • 2 TBSP honey
  • ½ C (105 g) unsweetened applesauce
  • Sweet + salty mix-ins of your choice: chocolate chips or chunks, raisins, peanut or regular M&M's or similar (Yum Earth, Unreal), pretzels, potato chips, raw or salted nuts, coconut flakes, sprinkles, white chocolate, butterscotch pieces, caramel (SmartSweets), chopped up candy bars, see notes*

Instructions
 

  • Preheat the oven to 325°F
  • In a bowl and in no specific order, add all of the ingredients except the mix-ins and mix until a dough forms
  • Incorporate the mix-ins of your choosing, but hold off on any crunchy items – set those aside to add after baking, otherwise they'll soften in the oven
  • On a prepped baking sheet, scoop the dough and lightly press down on each cookie or form the dough into cookies by hand, spacing them out evenly
  • Bake for 8-10 minutes, until the edges and bottoms are golden brown, and let cool
  • As the cookies are cooling, break up the pretzels, chips, or other crunchy component and lightly press the pieces onto the cookies
  • Store in an airtight container

Notes

  • *Mix-ins: for elite cabinet cookies, you want both sweet and salty elements, so don't overlook the salty bits, and when deciding what to add, think about bringing different textures together melty chocolate, gooey caramel, crunchy shells of M&M's, crispy salty chips, the bite of salted nuts, etc.
