Cabinet Cookies

What Forrest Gump said about chocolates can also be said of these cookies!

Kitchen sink cookies, but less soggy sounding.

Have you heard of kitchen sink cookies?? The name comes from the saying “everything but the kitchen sink”, meaning you can include just about everything (but the kitchen sink) in the cookies.

Still I can’t help but think of the *when you’re doing the dishes and a piece of food touches your hand* meme when I hear “kitchen sink cookies”. It reminds me too much of the nasty, soggy scraps of food leftover at the bottom of the sink or stuck in the strainer after doing a large load of dishes.

And that doesn’t sound very appetizing – quite the opposite actually!

So with a much more appealing title, cabinet cookies are a healthier take on kitchen sink cookies. The concept is the same, but the name is more fitting IMO in that you can use whatever you have in your cabinet as the mix-ins!

Aside the texture that’s INCREDIBLE – super soft with chewy golden edges – there’s plenty to love about these cookies:

  • Mixed in one bowl in no particular order
  • The dough comes together in like 7 minutes
  • Free of dairy, gluten, and eggs (so technically the dough is edible, almost making it 2 recipes in 1)
  • Vegan-friendly if honey is swapped out with maple syrup and the peanut butter is vegan (some is not) as well as the mix-ins
  • They have a long shelf life

Cabinet Cookies

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes

Ingredients

  • ¾ C creamy peanut butter
  • 1 C flour
  • 1 tsp. stevia or sweetener
  • ¾ tsp. baking soda
  • ¼ tsp. sea salt
  • 2 tsp. vanilla
  • 2 TBSP honey
  • ½ C (105 g) unsweetened applesauce
  • Sweet + salty mix-ins of your choice: chocolate chips or chunks, raisins, peanut or regular M&M's or similar (Yum Earth, Unreal), pretzels, potato chips, raw or salted nuts, coconut flakes, sprinkles, white chocolate, butterscotch pieces, caramel (SmartSweets), chopped up candy bars, see notes*

Instructions

  • Preheat the oven to 325°F
  • In a bowl and in no specific order, add all of the ingredients except the mix-ins and mix until a dough forms
  • Incorporate the mix-ins of your choosing, but hold off on any crunchy items – set those aside to add after baking, otherwise they'll soften in the oven
  • On a prepped baking sheet, scoop the dough and lightly press down on each cookie or form the dough into cookies by hand, spacing them out evenly
  • Bake for 8-10 minutes, until the edges and bottoms are golden brown, and let cool
  • As the cookies are cooling, break up the pretzels, chips, or other crunchy component and lightly press the pieces onto the cookies
  • Store in an airtight container

Notes

  • *Mix-ins: for elite cabinet cookies, you want both sweet and salty elements, so don’t overlook the salty bits, and when deciding what to add, think about bringing different textures together melty chocolate, gooey caramel, crunchy shells of M&M’s, crispy salty chips, the bite of salted nuts, etc.

Similar to Forrest Gump saying life is like a box of chocolates, each bite is like a surprise – you never know what you’re going to get!

Especially with the diverse and vast flavor profiles that can be created through different mix-in combos, the opportunities are truly endless here. And by using the odds and ends in your cabinet, you can clean out the nearly empty bags of candy and salty scraps in one fell swoop!

The base of these cookies is derived from another easy, *toss everything in a bowl and mix* cookie recipe: One Bowl Peanut Butter Cookies

If interested, the macronutrients are below. They are kept separate at the very end of each recipe blog so that this can remain a safe, positive space for all as not everyone wishes to see the nutritional information.

Macros per cookie, no mix-ins (makes 17): 11.2 C | 5.8 F | 3.4 P

Since the mix-ins vary, the macros are for the cookies alone, sans mix-ins. If you’d like to know the specific macros of the cookies you make, I recommend adding the total macros of your mix-ins to the entire cookie recipe macros (below) and dividing that by the number of cookies made to yield the exact macros per cookie.

Macros for the whole recipe, no mix-ins: 190.6 C | 98 F | 58.1 P
